it would be interesting if the designers of these bunkers decided to import exotic cave dwelling species of animals into the shelters so that residents would have a source of renewable food.
The TV mini-series "Planet Earth" episode "Caves" should cover all the animals they could have.

Of course, this is the Fallout universe so those animals would mutate and get bigger.
